Slow Cooker Beef Recipes

Beef Stew is a universally standard American dish and makes an magnificent crockpot or slow cooker dish. This article has two very dissimilar recipes for this general dish. Take your pick or why not try both? The firstborn is a Spicy Beef Stew that is made with cubed round steak and incorporates such spices as mustard seed, curry powder, fresh ginger, etc. The Beef-Mostaccioli Stew has it is divergence in it is name.

SPICY BEEF STEW
1 tbsp mustard seeds
1 1/2 tsp curry powder
1/2 tsp salt
pinch of cayenne
2 tsp canola oil
1 1/4 lb round steak, trimmed and cut into cubes
1 huge onion, sliced
4 garlic cloves, minced
2 tsp grated peeled fresh ginger
1 cup low-sodium beef broth
1 may (8-oz) tomato sauce

Place a little heavy skillet over medium heat. Add the mustard seeds and cook, stirring, until lightly toasted and starting to pop. This takes in regards to 3 minutes. Stir in the curry powder. Transfer mixture to a cup and stir in the salt and cayenne pepper.

Heat the oil in a big nonstick skillet over medium-high heat. Add half of the beef and cook, turning most times until lightly browned. Using a slotted spoon, transfer meat to the slowcooker or crockpot. Repeat the procedure with the remaining beef.

Spray skillet with nonstick cooking spray and set over medium heat. Add the garlic and onion to the skillet and cook, stirring frequently, until the onion starts to soften. Add the ginger and the curry mixture. Transfer the mixture to the cooker.

Add the beef broth and tomato sauce to the skillet. Bring to a boil, scraping bottom of skillet to loosen browned bits. Pour the mixture into the cooker, cover, and cook on high 4 to 6 hours or on low 8 to 10 hours.

Yield: 4 servings

BEEF-MOSTACCIOLI STEW
1 1/2 lbs beef stew meat
1 to 2 tablespoons canola oil
1 may (16-oz)diced tomatoes
1 cup sliced onion
3/4 cup chopped carrot
1/2 cup chopped celery
1 1/2 cups water
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon chili powder
pinch of black pepper
1 cup (uncooked) mostaccioli
Shredded mozzarella cheese for garnish

In a big skillet heat the canola oil. Brown the meat in the oil; drain off any excess fat.

In a slow cooker or crockpot, layer the carrots, celery, onion, and tomatoes. Place the browned meat over the vegetables.

In a little bowl, combine the water, salt, paprika, chili powder, and pepper; mix together well. Pour the mixture over the meat in the cooker. Cover the cooker and cook on high setting for 4 hours or low setting for 8 hours.

Cook the mostaccioli according to the package directions; drain well. Stir the cooked mostaccioli into the stew in the cooker. When serving, sprinkle mozzarella over the top of the stew.

Yield: 4 to 6 servings
